4,5 cl of gin
3 cl of lemon juice
2 cl of strawberry syrup
8 cl of beer
One of the pleasures of spring is experimenting with strawberries, both fresh and reduced in syrup. They are a bomb of flavors, aromatic, very fragrant, and have a very intense sweetness.
But to cut this sweetness there is nothing better than beer. A cold beer, a bitter pilsener, even a Double Ipa with exotic suggestions is not bad, but it’s a bit too aggressive. Start with a simple and sincere beer and then raise the bar.
We have noticed that beer in cocktails is struggling to be the protagonist, it should be used in the same way as soda or wine, it is an excellent shoulder to add an aromatic touch, but don’t ask too much.
So we decided to make a revised gin fizz with strawberry syrup and beer: the result was exciting. The cocktail is fresh, elegant, dry, very sharp. In hindsight, pink grapefruit could be replaced for an even more suggestive result, but we will talk about it again.

How to make Gin Fizz with strawberry and beer
Squeeze the lemon and strain the juice.
Uncork the beer and taste it: you can dare, double Ipa, pilsener, as long as it is not a beer too structured nor too malty and sweet. A thin and floral beer would be perfect (Weissbier alert).
To compensate for the bitter tone of the beer, the dose of strawberry syrup is doubled.
Let’s start: put the lemon juice, gin, strawberry syrup in a shaker with a little bit of ice, shake and pour into a tall glass full of ice.
Top with beer, add a slice of lemon and your new aperitif is served!
Which gin to use for making the Gin Fizz with strawberry and beer
Better to lean towards a floral distillate, delicate and not too rough. We tried with Plymouth, but it completely smashed the cocktail. For making this beauty you need finesse not muscles. The Ophir, with all its spices, was fine, but not perfect.
