These almond & orange muffins are a delicious combination of flavors that evoke the warmth and aroma of the Mediterranean. These sweet treats are ideal for an energetic breakfast or a refined afternoon snack, thanks to their soft texture, which is enhanced by crunchy almond flakes and the fresh aroma of orange.

Ingredients (for 12 muffins)

  • 250 g of 0 flour
  • 70 g of granulated sugar
  • 100 g of ground almonds
  • 5 grams of baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • Grated zest of 1 large, organic, untreated orange
  • 2 large eggs, at room temperature
  • 100 ml of sunflower seed oil
  • 120 ml of fresh orange juice
  • 1 teaspoon vanilla extract
  • Almond flakes to decorate

Preparation

Preheat the oven and prepare the baking tray. Preheat the oven to 180°C. Line a muffin tin with paper liners or lightly grease it.
Mix the dry ingredients. In a large bowl, sift together the flour, ground almonds, baking powder, baking soda, and salt. Add the grated orange zest and stir to distribute it evenly.
Combine the wet ingredients. In another bowl, beat the eggs and sugar until light and frothy. Add the oil, orange juice, and vanilla extract, mixing well.
Combine the dry and wet ingredients. Gradually pour the wet ingredient mix over the dry ingredients, stirring with a spatula until just combined. Avoid overmixing to keep the muffins fluffy.
Filling the mold and decorating. Distribute the mixture into the baking cups, filling them up to three quarters. Sprinkle the almond flakes on top of each muffin before placing them in the oven.
Bake and bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve: Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Serve them warm or at room temperature.
