With the arrival of the Spring, strawberries become the protagonists of our cocktails, starting from a very simple drink like Rossini, a delicious cocktail made in just a few minutes. Mix strawberry juice, made with the extractor, Prosecco and the drink is done.
But apart from this great aperitif, a fundamental ingredient for every bartender is strawberry syrup. More consistent and thicker than juice, but excellent for flavoring cocktails with a sweet and fragrant touch.

Ingredients and doses for making strawberry syrup
- 1 kg of strawberries, from which you get 500 ml of strawberry puree
- 1 kg of sugar syrup, the dose is twice the weight of the strawberry puree
How to make strawberry syrup
The recipe is very simple: reduce the strawberries into juice with the extractor. Now to be called syrup, the amount of sugar is always double compared to fruit puree. The weight of the syrup must be double the weight of the strawberry puree, if you want to make a syrup that is conserved, in this way the strawberry syrup will be able to preserve itself without problems for a month. Of course, flavors and scents start to fade after a week, so make a small batch, it’s better.
But if you want to make a strawberry premix, just add the same weight as the strawberry puree.
We have not indicated the dose of sugar syrup for a simple reason. First, you have to be precise and then weigh what comes out of the extractor and second, you have to taste the strawberries before sweetening them. It all depends on how ripe they are and on the quality type of the strawberries.
If you do not have the extractor, put the strawberries in a colander and crush them with a spoon. Never use the blender that burns the flavors, aromas and all the aromatic-nutritional properties of the strawberries.
Pay attention, as any premix, the strawberry premix must be consumed within 24 hours, store in the refrigerator for a maximum of 1 day. Strawberry syrup can also be stored for a month, but after a week aromas and flavors start to lose intensity and therefore must be redone.
