The Matikator cocktail is an acrobatic variation of the Daiquiri, a very sharp and aromatic cocktail, which uses the base of this tremendous Cuban cocktail, but only adds three ingredients. The Greek Mastika, the Pimento Dram and the sage.

Pimento Dram can be a liqueur, a flavored rum or a spicy bitter made from dark rum, allspice carnation, cinnamon and other flavorings. It is very customizable, but what must never be missing is the allspice, which is none other than Jamaican pepper, also called allspice. It has a less penetrating flavor, but is spicier than black pepper and therefore as botanicals for cocktails or to flavor spirits it is excellent.

Mastika is the legendary liqueur of the island of Chios, made with alcohol and mastic resin. Its flavor is aromatic, with splendid balsamic references of pine, herbs, flowers and wood. Mastika is sweet, so remember to use a little, maximum 1 cl, it only serves to enrich, honey takes care of sweetening. If you find orange blossom honey it’s perfect, its flavor goes well with Mastika, but an acacia classic is ok. It is a classic aperitif as a cocktail, but beware, the alcohol content is relatively high, so take it easy and don’t drink too many libations to the gods.

Ingredients and doses to make the Mastikator cocktail

  • 4 cl of white rum
  • 1 cl of Mastika
  • 2 cl of lime juice
  • 2 sage leaves
  • 2 drops of Pimento Dram
  • 1 teaspoon of orange blossom honey

How to make the Mastikator cocktail

Put the honey in the shaker with a tablespoon of water and stir to dissolve it. When it is melted, pour the rum, the filtered lime juice and the mastika into the shaker, add the sage and lightly pound with the pestle. Add the ice, shake quickly, pour by straining into an old-fashioned glass with a large piece of ice and drop two drops of Pimento Dram on top. Gently mix and then serve.
