The Ari Mail cocktail is an excellent drink, a fresh, elegant drink, all played on a delicate balance. The recipe for the Air Mail cocktail might seem like a simple twist of the French 75 the cocktails are practically identical, but instead of gin, you will have to use rum and instead of sugar syrup a simple honey premix. Don’t be scared a honey mix is just a mixture of honey and water, a quick and convenient way to dilute honey and be able to use it faster when you have to make many cocktails in sequence.
Specifically, rum is Bacardi Carta Oro (gold rum), as it was invented by this company. Or at least the first written recipe of the Air Mail cocktail appeared in 1930. Don’t worry about that and use the rum you prefer. By the way, the right spelling is detached and not “Airmail”!
But since we are talking about it, the Air Mail is one of those cocktails that you can make with both a young and fruity Cuban rum and a gold rum, it depends on your mood. Both variations are good and a lot depends on how structured and acid the Champagne top is. The more bland the wine, the thinner the rum must be, otherwise, it is crushed.
Ingredients and doses of the Air Mail cocktail
- 60 ml of Champagne
- 30 ml of rum Carta Oro
- 15 ml of honey mix
- 15 ml of lemon or lime juice
How to make the Air Mail cocktail
Squeeze the lemon and strain the juice. Put the rum, lemon juice and honey premix in a shaker with ice and shake vigorously, but for no more than 12 seconds. Pour into a highball glass with ice and add the Champagne. As you have seen the glass and ice other small changes that differentiate the Air Mail cocktail from the French 75, so pay attention to details when preparing them.
To make honey premix, pour honey and water in equal quantities into a jar and shake for 1 minute. If you only use honey, add 1 teaspoon and shake for 1 minute. It doesn’t change much, it’s just a matter of timing and practicality.
