Pornstar Martini cocktail: Douglas Ankrah’s original recipe with passion fruit, vanilla vodka and Champagne

The Pornstar Martini is a velvety and fragrant cocktail, a very inviting aperitif, created in 2002 by the legendary Douglas Ankrah, bartender of the Townhouse bar in Knightsbridge in London. The cocktail is exceptional and based on the incredible harmony created between the vanilla and the tropical flavor of the passion fruit, an excellent game of sweet and elegant references. The peculiarity of the cocktail is that it is served with a shot of Champagne, great for adding a fresh touch that cuts across the whole drink with bubbles and acidity.

The ingredients are exotic but easy to find: vanilla vodka, passion fruit liqueur, vanilla sugar, passion fruit puree, and a glass of Champagne to serve separately.

The Pornstar Martini is a classic brunch or aperitif cocktail, and although it has a medium alcohol content, the alcoholic sensation on the palate is mild. This is why it is not to be taken lightly: deceptive as few know how to be.

It is called Martini only because it is served in a Martini glass, but it has no relation to the legendary Martini Dry.

Ingredients and doses to make the Pornstar Martini cocktail

• 50 ml of vanilla vodka
• 20 ml of passion fruit liqueur
• 50ml passion fruit puree, 2 passion fruit
• 2 bar spoons of vanilla sugar
• a shot of Champagne, 50-60 ml, to be served separately

How to make the Pornstar Martini cocktail

Cut the passion fruit in half, keep one half aside, remove the pulp, and pass it through a fine sieve, squeezing with a spoon. To make vanilla sugar, don’t worry: mix sugar and vanilla in equal parts. It’s not vanilla sugar powder but a simple mixture of white sugar and vanilla powder.

Put some ice in a shaker, add the passion fruit puree, vanilla vodka, passion fruit liqueur, 2 teaspoons of vanilla sugar, shake quickly and pour into an iced martini glass. Decorate with half of the passion fruit, add a teaspoon to extract the pulp. Serve the cocktail accompanied by a 60 ml shot of Champagne. It seems like a tricky cocktail to make, but in reality, you need to prepare all the ingredients in advance to work faster then.

How to make vanilla vodka

Take a bottle of vodka and put a vanilla bean in it, cut in half lengthwise. Cap, shake the bottle, rest for a week, and filter and bottle the vodka again.
