The Inoki cocktail is a drink that starts from the classic ingredients of Mantuan Tortelli: pumpkin, amaretti cookies, and mustard. A dish so good and uncompromising that it has no equal and that above all deserves a themed cocktail.
It is actually very simple to make the filling of Mantua Tortelli, just start with these three great ingredients and add an alcohol base of dark rum, dry vermouth, a dash of chocolate bitter to add a decadent and herbaceous tone. As the only additional operation, you have to cook the pumpkin in the oven, a fundamental step to bring out its sweet flavor. It is useless to work with uncooked pumpkin, too many flavors are lost and then a quick 20-minute bake in the oven is not a big problem.
For this reason, it is advisable to make the cocktail dough in advance and a little more consistent quantity.
The alcohol content of the Hinoki cocktail is medium, not too strong and the rum is masked by a thousand flavors, so it is not too heavy for the palate. As an aperitif, it is very full and intense, better to try it as an after-dinner or a meditation cocktail.
Ingredients and doses for making Hinoki cocktail
- 4 cl of dark rum
- a pumpkin cube of 10 grams
- 1 cl of lime
- 1 amaretto
- 1 tablespoon of Mantua mustard syrup
- 2 drops of chocolate bitter
- 1 cl of dry vermouth
- rosemary
- 2 tablespoons of egg white
How to make the Inoki cocktail
Bake the pumpkin in the oven at 160 degrees for 20 minutes, then peel it and cut a piece of it.
Put the pumpkin in the shaker, add 1 amaretto cookie, lime juice, mustard syrup and a piece of it, pour the rum and start muddling with the pestle to mix all the ingredients. If you are in a hurry you can also use the blender.
When you have reduced all the ingredients to a pulp, add the dry vermouth, the chocolate bitter, the egg white and stir for 1 minute.
Add some ice, shake quickly and pour into an iced glass. Decorate with a sprig of rosemary and serve the Inoki cocktail.
