Nuovo Paradisetto Bianco: The Review Of A Natural Wine As Salty As The Sea
Nuovo Paradisetto Vino Bianco is a sharp wine that titillates the palate with a bright and citrusy flavor, one of those summer wines you would drink at all hours, almost like an excellent cold juice.
It is not an exceptionally structured wine, but the duet between the fleshy fruit, the salt from the famous few of the Karst, and sharp acidity is inviting, helps smoothness, and keeps the wine always dynamic.
How it is produced
The vines have an average of 30 years and have their roots in soils rich in marine marl and limestone. Yes, they are the ponche, marine fossil remains that accumulated millennia ago and make these hills unique—spontaneous fermentation and aging in steel.
The wine is neither filtered nor clarified, and obviously, no sulfur is added, but let’s not forget that it is a Triple-A wine and, as such, offers high standards of sustainability and production ethics. The grapes used are Chardonnay, Friulano, Glera, Pinot Bianco, Sauvignon Blanc.
Organoleptic characteristics
The flavors and aromas of this wine are clean, deep, and sharp just enough, but above all, there is concordance between the natural processing and the thickness of the wine. We said it won’t be very complex, spicy, or full of wood and Kentucky tobacco (luckily), but give it 8 or 9 years, and all this citrus and iodized charge can turn into a nice evolution.
The bouquet opens fruity, turns to aromatic herbs, and closes with these splendid notes of salt, sea, and oysters mixed with candied citron: impeccable fragrant cleanliness and good variety.
On the palate, it is salty, well balanced by acidity and a delicate roundness. The structure is not exaggerated, but it is a wine that starts on tiptoe and then flows into a crazy marine extension. It will be simple, but this does not mean that it is predictable. On the contrary, it has a didactic flair in describing this mineral stratification.
Give it time. For now, it is an excellent summer wine, sunny and easy to drink, but it certainly does not lack potential.
