After some unsuccessful experiments, we finally managed to prepare a cocktail with extra virgin olive oil, which with a generous Pindaric flight of the imagination we called Cocktail Virgin.

In the last few years, cocktails made with extra virgin olive oil are catching on, even though the oil is a very atypical ingredient and also difficult to manage since it has a peremptory taste and a density not easy to incorporate into a cocktail.

We immediately reveal the egg of Colombo, that is how to dissolve olive oil in a liquid, in this case in tequila, which we have chosen as the alcoholic base of our drink: soy lecithin. That’s right, you need an emulsifier to melt fat in a liquid, it’s not a great discovery, but at least now you know how to do it. A fraction of a teaspoon is enough to dissolve 1 cl of extra virgin olive oil in 10 cl tequila, the doses of the drink for two people.

In practice, you will do nothing but a tequila flavored with extra virgin olive oil, if you want you can also make it in larger quantities, but it is always better to prepare it at the moment to keep the aromas of extra virgin olive oil intact and sharp.

You could also use lemon to melt the extra virgin olive oil, but it would be a temporary solution, a simple citronette, good for the salad. But in a cocktail, after a short while, the two elements would separate and it would be a disaster to serve a cocktail with yellow bubbles of fat.

As an alcohol content, the Virgin cocktail is fairly light, it is very good as a relaxing aperitif, not too demanding, indeed it is very drinkable and rich in aromatic scents and Mediterranean suggestions.

Ingredients and doses for making the Virgin cocktail

  • 5 cl of tequila
  • 0.5 cl of extra virgin olive oil
  • 1 cl of water
  • 1 cl of lime juice
  • 3 cl of pineapple juice
  • 1 cl of carrot juice
  • 1 cl of agave syrup
  • a pinch of salt
  • the tip of a teaspoon of soy lecithin

How to make the Virgin cocktail

Let’s start with the solution of tequila, water and extra virgin olive oil: dissolve the lecithin in a bowl or a glass, stir until the emulsifier is dissolved and the water becomes opalescent. Add the extra virgin olive oil, the tequila and stir until they are perfectly mixed.

Now let’s move on to the actual cocktail: cool a cup with ice.

Obviously, the lime must be freshly squeezed and the two juices must be made with the extractor, do not use industrial stuff.

Put all the ingredients in a mixing glass with ice and stir to cool and mix the ingredients.

Empty the cup and pour the cocktail through a strainer.
