Directions
The Spritzarello-san cocktail is very simple, it is a very aromatic twist of the classic Spritz based on prosecco and bitter, but instead of wine, it includes the kombucha, the mythical beverage obtained from the fermentation of tea with the scooby.
It is nothing special, now there are hundreds of spritz twists and sparkling cocktails, but we like Spritzarello-san because it is never trivial or monothematic since kombucha adds a thousand shades of flavor, umami and sea suggestions.
As an alcohol base for making this Spritz with sake and kombucha, we are going to use sake, a bit of soda to make the drink lighter and more stimulating, kombucha, bitter and a very small piece of kombu seaweed. The recipe is very simple, but be careful with the kombu seaweed. Leave it to infuse in the bitter for just a few minutes, to give the bitter touch of umami flavor, but not more than 2 minutes or it becomes a sea-squeezed juice.
Ingredients and doses for making Spritz with sake and kombucha, Spritzarello cocktail
- 4 cl of sake
- 8 cl of kombucha
- 1 cl of bitters
- 1 spoon of raspberry syrup
- a small piece of kombu seaweed
- soda
- ice
How to make the Spritzarello cocktail
Pour the bitter and the raspberry syrup into a glass or a shaker, add the kombu seaweed, mash it gently with the pestle and leave it to infuse for 2-3 minutes, then remove the seaweed.
Fill a glass with ice, pour the bitter, then sake and kombucha and a splash of soda. Decorate with lemon and fresh raspberries.
