One of the most intriguing variants of the dear old Negroni is the one with the mezcal instead of gin.

It looks blasphemy, but remember that the mezcal is different from the tequila. On the contrary, it has a much more delicate flavor, smoked but fine, fruity, and very aromatic.

Indeed, the flavor of the Mezcal Negroni cocktail is very different. Instead of woods, juniper, and aromatic spices, we find smoky flavors and aromas, the lysergic touch of agave, ripe fruit, banana, sandalwood, and citrus fruits.
