It took us a while to digest the idea of ​​writing a page on vegan amatriciana. Indeed even now, it seems almost an anathema. There is nothing wrong with leaving the dark side of the meat. Nobody should feel judged or ostracized just because the culinary culture has deep roots in our lives. It almost seems that one has to justify himself: hey, it is a pasta with vegan tofu sauce, but I say it is the vegan amatriciana to give it dignity.

It is quite the opposite. This constant coming back to classic cuisine is a lack of courage. So why did we also call it vegan amatriciana? It is a simple expedient to attract your attention, to make you read these words. Otherwise, if we had written pasta with tomato and smoked tofu, it would have been too sad…

But there will come a day when there will be no subjection of vegan cuisine towards the classic. And only then, thanks to a new awareness, will we begin to see new, creative and tasty vegan recipes. For now, let’s be satisfied with this vegan amatriciana without bacon and plenty of juicy smoked tofu.

Ingredients and doses for making vegan amatriciana pasta

  • 400 grams of pasta
  • 300 cl of tomato sauce
  • 1 shallot
  • 200 grams of smoked tofu
  • salt and pepper
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon paprika
  • extra virgin olive oil

How to make vegan amatriciana pasta like a pro chef

The big obstacle you will encounter in making this dish is that guanciale (bacon) is everything in the Amatriciana recipe. It would not even make sense to talk about a baconless Amatriciana, but some precautions can help us make a great pasta dish.

First of all, we will replace the abundant animal fat with an excellent extra virgin olive oil to structure the dish. Choose a fragrant and tasty extra virgin such as Ligurian taggiasco EVOO.

Then to replicate the biting taste of seasoned pork, we could add a spicy touch adding paprika and cardamom to emphasize the smoked suggestion of the dish.

And then we end up with smoked tofu: here, you should invest without hesitation. Good smoked tofu makes the difference between a lackluster amatriciana and a vibrant one.

Okay, let’s start with the recipe. Cut the tofu into small cubes or strips and fry in a pan with four tablespoons of oil for 10 minutes.

When tofu is crispy, remove it and throw in the tomato sauce, shallot and season with salt, pepper, cardamom powder, paprika, and cook for 30 minutes.

Add the crispy tofu to the vegan amatriciana sauce and cook for 10 minutes.

Cook the pasta al dente and drain it, keeping one glass of cooking water.

Toss pasta in the pan with the sauce, add the cooking water, and finish cooking for 4-5 minutes.

When the pasta is ready, serve and sprinkle with vegan cheese at will.

Easy with your Brunello di Montalcino and Sagrantino now. We don’t have tons of animal fat here. Okay, the tomato is strong flavored, but there is not much fat to attack. Choose a light Valpolicella, Chianti Classico, Lambrusco or Bardolino, a Piedmontese Grignolino, but also an Apulian pink wine would be ideal.
