Welcome back to our random Friday fish recipe. I witnessed something unusual this morning: I fell into temptation and I bought some desalted cod from my beloved fishmonger…
I know that I have always advised you to do this at home by yourself, but this time I took my chances… And the result was great, this baccalà was perfect.
The recipe is the classic stewed codfish with tomato sauce, olives, capers, and potatoes.
Nothing difficult, but the combination is great: tomato is sweet, oregano and olives aromatic, codfish always delicious so what else? Yeah right, capers, well, are lovely, who does not love capers?
In short, if you have 40 minutes to devote to a delicious fish dish, give it a try.
Ingredients for making salt cod stew with tomato sauce, olives, and potatoes

- 1.2 kg of desalted cod or let it soak for 3 days if you buy salted cod
- 2 onions
- 4 cloves of garlic
- 400 ml of tomato sauce
- 2 tablespoons of tomato paste
- 2 tablespoons of chopped capers
- salt and pepper
- 60 grams of black olives
- 400 grams of potatoes
- extra virgin olive oil, only the good stuff
- 1 sprig of fresh oregano

Many of you will be wondering why there are not even pine nuts and raisins to make a more Sicilian style recipe. The answer is simple: if you put olives in, raisins and pine nuts are not welcome. You can try but the olives have a too overbearing flavor…
Ok, let’s start. Desalt fish soaking it in water for 3 days: you have to change the water every 8 hours.
Boil 3 potatoes for each guest, you can also bake them. Cook for 20 minutes, then let them cool, then peel them.
Thin slice onions, crush garlic and gently pan-fry in 6 tablespoons of extra virgin olive oil for 15 minutes.
Season with salt and pepper, then add tomato sauce, a pinch of sugar, tomato paste, oregano and a tablespoon of white vinegar.
Cook for 20 minutes more. Add chopped olives and capers, cook 5 minutes more then turn off. Good, the sauce with tomatoes and olives is ready.
Now cook the cod in the pan or the oven for 10 minutes, flipping it once.
Put the fish in the pan, cook for 5-6 minutes along with potatoes and serve.
