Chocolate mousse is one of the easiest desserts to prepare, but that does not mean it’s a dessert to be underestimated.

Indeed, when you want to serve a delicious dessert, but you don’t have much time to bake 445 layer cakes or a decadent Saint Honoré cake, prepare a couple of chocolate mousse and place them in the refrigerator, you can even make them the day before and then serve for dinner.

The cream doubt: to be or not to be…

We can discuss about cream as an ingredient for a mousse. Let’s say that in this simple recipe, a mousse in the glass, you don’t need it. But if you are going to make a more complex and solid dessert isinglass and fresh cream are necessary.

Ingredients for making a great chocolate mousses

  • 400 grams of dark chocolate
  • 150 grams of sugar
  • 150 grams of butter, at room temperature
  • 4 eggs
  • a dash of fresh cream
  • 2 cl of whisky

How to make the perfect chocolate mousse

Separate egg whites and set them aside.

Beat the egg yolks and sugar with a whisk for 5 minutes. The mixture should be foamy and swollen.

Melt chocolate in a double boiler, gently with a little drop of fresh cream and a bit of whiskey, if mousses are for adults only and you want to add a fabulous touch to your desserts.

Stir chocolate well, then turn off, remove it from the water and continue to stir for 2-3 minutes.

Add butter, stir and add eggs into the bowl and mix well.

Whip egg whites with a pinch of salt and when they are stiff add them to the mixture and stir with a wooden spoon, being careful not to take them apart. Take your time, stirring from top to bottom, with gentle movements.

Pour the chocolate mousse into 8 cups, let rest in the refrigerator at least for 5 hours, before serving.

You can also prepare it the day before for the following evening.

Sprinkle with curls of extra dark chocolate.

As a variation, you can top your mousse with a swirl of whipped cream and a couple of mint leaves.

Another acceptable option is the addition of dried fruits: pistachios, walnuts, hazelnuts or almonds will make the chocolate mousse even more delicious!
