Don’s Special Daiquiri, invented by the legendary Donn Beach, one of the fathers of the Tiki cocktail movement, is one of the most famous, appreciated and sumptuous cocktails (Tiki). More than a cocktail, it is a symphony that mixes, doses, and alternates sweetness, acidity, and more evolved tones, spicy and rich in caramel hints prevalent in Jamaican rum.

Ingredients and doses to make Don’s Special Daiquiri
- 3 cl of Jamaican gold rum
- 1.5 cl Cuban white rum
- 2 cl of lime juice
- 1.5 cl of passion fruit syrup
- 1.5 cl of honey mix
How to make Don’s Special Daiquiri cocktail
Put some ice in the cocktail glass, which you will throw away.
Squeeze the lime and strain the juice.
Put all the ingredients in a shaker with ice and shake for 30 seconds. Honey, passion fruit and rum are all ingredients with a complex flavor and must be mixed well. Especially honey.
Pour into the cup filtering with a strainer and serve.
How to make passion fruit syrup
Cut the passion fruit in half, then collect the juice in a jar that you can close tightly with a lid. With a spoon, extract the pulp and seeds and put them in a colander and mash for a couple of minutes. Now put everything, even the seeds, into the jar, add 2 tablespoons of sugar syrup, close and shake for 3-4 minutes. Strain the juice and it’s ready to use.
How to make the honey mix
To make this honey syrup, all you have to do is dilute it with water to make it less viscous and more easily soluble in cocktails. Put honey and water in equal quantities in a jar, shake and the honey mix is ready.
