The Sumatra Kula cocktail was the first tiki drink invented by the legendary Donn Beach, a splendid variant of Daiquiri, enhanced by grapefruit juice, orange and honey. The cocktail retains all the charm and freshness of the great Cuban classic, but the introduction of honey and orange already hints at Donn’s imaginative, creative vein.
However, the Sumatra Kula should not be done with the shaker, but you will have to use a particular technique called flash blend. The ice is crushed and then added to the other ingredients in a blender and blended for a maximum of 8 seconds to allow the ice to fragment, not to melt, so that tiny crystals remain in suspension, cooling the cocktail for a few minutes. Don’t worry. The cocktail is light, sharp and will not remain in your glass for more than 4 minutes, so there is no danger of watering down the cocktail.
Origin of the Sumatra Kula cocktail
Many tend to confuse this Kula with Q.B. Cooler, another great cocktail from Donn Beach, although not a cooler. Still, the assonance of the two names (kula and cooler) tends to create confusion. The name seems to come from the custom also practiced in Papua New Guinea, where Don traveled extensively on the Kula exchange, a ceremonial exchange, with a social background, where a complex exchange of favors and shells leads to the collective creation of jewelry through mutual help and exchange.
Ingredients and doses to make the Sumatra Kula cocktail
1.5 cl of lemon juice
1.5 cl of orange juice
1.5 cl of lime juice
4.5 cl of light rum
1.5 cl of honey mix
How to make the Sumatra Kula cocktail
Squeeze all the citrus fruits and strain the juice. Dissolve the honey in an equal amount of water to make it liquid and easier to work with.
Put all the ingredients in a blender with 100 grams of crushed ice and blend for 5 seconds, then pour into a tiki cup and decorate to taste.
