In honor of the beginning of the truffle season, especially the legendary Tuber Magnatum, the white truffle, we have decided to offer you a sumptuous aperitif with a velvety and irresistible taste: a truffle cocktail.
The alcoholic base is rum, which must be dark, warm, and spicy, then we have the soft embrace of almond milk, against which the spicy taste of white truffle acts as a counterpoint. The chocolate bitter closes the circle of friendship and mottles with herbaceous and complex notes: opulent and contemptuous, but thanks to its intensity, it smooths out the sweet foamy base of almond milk.
Attention, it is a fragrant cocktail, elegant but light, not very alcoholic, all played on tones that dance on tiptoe, so do not overdo the rum. Otherwise, you will burn it.
If you don’t find the white truffle, use the black one, which is less valuable, but no one is offended. However, given the affordable price that white truffles have this year, it is perhaps worth taking advantage of.
Trufflelicious cocktail ingredients and doses
- 5 cl of dark rum
- 6 cl of almond milk
- 4-5 flakes of white truffle
- 3 drops of chocolate bitter
- 1/4 of egg white or 1 cl of faba water
How to make the Trufflelicious cocktail
A trick to make the cocktail much tastier is to flavor the almond milk in advance. Put 4-5 flakes in 12 cl of almond milk.
Ok, let’s start, crumble 4 flakes of white truffle in the shaker, add the almond milk, the rum, and a few drops of chocolate bitter. Add a little egg white or acquafaba if you are vegan, 3 ice cubes, and shake for 3 minutes. Acquafaba is nothing more than the cooking liquid of canned beans/chickpeas/legumes, nothing exotic.

Serve in a small bowl and decorate with another 2-3 truffle flakes and forget about the obsolete Barolo-truffle combination (joking!).
