The Casino is a cocktail created by subtraction: it is an Aviation without crème de violette, with orange bitter instead of the famous purple crème.
The cocktail is very different, less floral, but more citrusy and dry, despite Old Tom Gin making you feel its sweet caress.
Because the peculiarity of the Casino is the presence of the old Old Tom Gin, precisely the one that is also used for Tom & John Collins. The history of this particular gin, famous for its sweet taste, is amazing.
In practice, it was born in 1700, during the explosion of the gin phenomenon, when London poachers cut gin with sugar to disguise the smell during distillation and escape the authorities’ controls, which closed hundreds of smuggling distilleries.
Today few produce it and every good aficionado should keep a bottle among their treasures, but if you can’t get it, add 1 cl of sugar for each cocktail.
But let’s go to the original recipe of the Casino, an exceptional aperitif, fresh, but smooth, well-balanced thanks to the combo of citrus fruits and the resinous scents of gin.
Casino cocktail ingredients and doses
- 4 cl of Old Tom Gin
- 1 cl of maraschino
- 1 cl of orange bitter
- 1 cl of lemon juice
Casino cocktail preparation
Squeeze the lemon and strain the juice.
Put all the ingredients in a shaker filled with ice.
Shake gently for 12 seconds and pour into a previously cooled cup with ice.
Garnish with orange peel and maraschino cherry.
