  • 30 chicken wings
  • 7 green onions
  • 15 grams of salt
  • 10 grams of pepper
  • 15 grams of baking soda
  • 120 grams of olive oil
  • juice of 2 lemons

For the hot sauce

  • 250 ml of honey
  • 50 ml of soy sauce
  • 70 ml of Thai fish sauce

  • 50 ml of sesame oil

  • 6 grams of chili powder
  • 10 ml of Chinese rice vinegar

How to make baked chicken wings with hot sauce

Peel the pears cut them into pieces and then blend them coarsely.

Peel and mash the garlic and ginger, brown them in a little olive oil, add the pears and all the other ingredients, bring to a gentle boil, lower the heat, cook for 5 minutes, and then turn off.

Now wash the chicken wings and season them with a marinade of salt, pepper, oil, lemon, and baking soda pinch. Baking soda is essential to make them crunchy: if you’ve never tried it, it’s the barbatrucco that will change your life!

Leave the chicken wings to marinate for 2 hours in the refrigerator.

Take out the wings, then dab with absorbent paper and bake them in the oven at 150 degrees for 30-35 minutes, until they are golden and crunchy.

Take them out, dip them in the sauce and cook in the oven for another 5 minutes.

Remove the wings from the oven and sprinkle with the spring onions cut into fine rounds.
