How it is produced
Except for sulfur and copper, the cellar across the river works perfectly without pesticides or other man-made treatments.
The vineyards are spread out over the hills of Marzabotto.
They are in a natural park where there are 3 hectares of vineyards and another 27 hectares of woods, fields, fragrant herbs, and unspoiled nature.
Everything is managed according to the dictates of biodynamics. Clean and effortless production. Spontaneous fermentation in steel without adding sulfites or refrigerating the bottle.
Organoleptic characteristics
Juicy, crunchy, and finely carbonated, but with great depth, even though it has a rural and slightly rustic background.
The result is a wine that you can bite into, which is salty and has pulpy, rich fruit. It also has a wonderful smell that comes from flowers and light spices.
It’s not hard, but once you’ve tasted this pure and charismatic concentrate of Pignoletto, you can never go back to the industrial wines.
