Whiskey, chocolate and walnuts are among the tastiest combinations in the kitchen, especially if you are thinking of making a cake. Of course, it is a simple dessert, a cake almost a donut very well seasoned and full of flavors, but the technique is always the same, so you don’t need excellent skills.

A little time, that’s what you need, because to make the cakes well, the dough must be treated with respect and love and you have to mix slowly to oxygenate it and incorporate air.

That said, you don’t need many ingredients: whiskey, of course, extra dark chocolate, walnuts and if you want some amaretto too, it’s a wonder.

Ok, let’s bake!

Ingredients for making the cake with walnuts, whiskey and chocolate

For a mold of 22-28 cm in diameter

  • 150 grams of flour
  • 100 grams of starch
  • 250 grams of sugar
  • 250 grams of butter
  • 5 eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla powder
  • 1 organic lemon, untreated
  • 80 grams of chocolate chips
  • 6 cl of Scotch single malt whisky
  • 100 grams of macaroons
  • 100 grams of walnuts

How to make the perfect nut, whiskey and chocolate cake

Before leaving, leave the butter out of the refrigerator for 2 hours, including the eggs.

Chop the walnuts until they are reduced to an almost floury consistency.

Do the same with the macaroons.

Whip the butter with a whisk together with the sugar for 7-8 minutes.

Separate the egg whites and set them aside.

Add the egg yolks to the butter mixture, one at a time, only when it is well blended.

Now mix flour, yeast, starch in a large bowl.

Pour the flour into the mixture using a chinois.

Add the whiskey, then add the walnuts, the chocolate, the amaretti and finally the finely grated lemon zest.

If the mixture is too thick, add a drop of milk.

Whip the whites with a pinch of salt for 4 minutes and when they are firm, incorporate them into the cake dough, stirring slowly, from top to bottom, being careful not to deflate them.

Grease a mold of 28 cm in diameter, then flour it and pour the mixture inside.

Bake in a hot oven at 170 degrees and cook for 40 minutes.

Remove from the oven and when it has cooled, sprinkle with icing sugar.

Which wine goes well with the walnut, chocolate and amaretti cake?

We chose a structured and spicy wine such as Vigna Serè by Dal Forno is pure magic. Also worth trying with liqueur wines and spirits such as sweet vermouth, Port wine, Marsala, Madeira wine, Sherry, Brandy, Cognac and Calvados.

If you want to combine a spirit, Ardbeg 10 is fabulous.
