And that’s why today we’re going to make Pumpkin Donuts, the fall version of America’s famous Pumpkin Donuts. The recipe is straightforward, don’t worry, you will create splendid and tasty desserts in less than 30 minutes flat. These we offer are fried, but if you don’t feel like preparing heavy desserts or giving them as a snack to your children, you can also bake them in the oven. This way, they will be much less greasy and greasy and healthier.

Ingredients and doses for making pumpkin donuts

To make 20 donuts

  • 200 grams of potatoes
  • 300 grams of pumpkin
  • 650 grams of flour
  • 40 grams of sugar
  • 140 ml of whole or almond milk
  • 14 grams of cream of tartar
  • 14 grams of baking soda
  • 1 glass of extra virgin olive oil
  • 1 tablespoon of lemon
  • 6 grams of vanilla powder
  • 10 grams of ground cinnamon
  • 6 grams of ground cloves
  • 4 grams of nutmeg
  • 1.5 liters of sunflower oil for frying
  • 45 grams of sugar for sprinkling

How to make pumpkin donuts

Bake the pumpkin in the oven at 160 degrees for 20 minutes, peel it, set aside the seeds for soups and mash the pulp with a potato masher. At the same time, boil the potatoes, peel them, mash them and add them to the pumpkin. Season the mixture with cinnamon, nutmeg, cloves and mix.

Sift the flour and place it in a bowl with the sugar and vanilla powder. Pour the baking soda, lemon and cream of tartar into the milk and stir. Now let’s get ready to knead: as always, the advice is to use a planetary mixer to make less effort, save precious time, and make the dough much more consistent and elastic.

Put the flour in the mixer bowl, add the potatoes and pumpkin, the milk and start kneading. Add two eggs, the milk with baking soda and cream of tartar and continue to knead for a couple of minutes.

Depending on the consistency and humidity of the dough, add the oil. There are different types of potatoes and squash, so before adding all the oil, check that the dough is elastic and not too liquid.

Then adjust the consistency with oil and flour, remembering that we want to obtain a firm dough to be worked on without fear of breaking it. Knead with the planetary mixer for at least 10-15 minutes, then turn off and flour a cutting board.

Lay the dough and cut pieces to form dough rolls 3-4 centimeters in diameter and 10-12 centimeters long. Roll up the pieces of dough and form them into donuts, then place them on a baking sheet, cover and leave to rest for 1 hour.

Baking pumpkin donuts

When ready to cook the donuts, heat 1.5 liters of sunflower oil in a saucepan and bring the temperature to 170 degrees centigrade. In these cases, an instant thermometer is handy to avoid burning or, even worse, soaking the donuts in oil with a too low temperature. 170 is the way to go, constant!

Dip the donuts in boiling oil, cook for 2 minutes on each side, drain on absorbent paper, and dab with more paper. Put some brown sugar in a bowl or on a plate and bread the donut in sugar. Keep frying mercilessly. You are on a mission for Mr. Donut.

Cooking pumpkin donuts in the oven

If you already feel guilty just reading this “fried” recipe, remember that you can always bake donuts in the oven. Oven preheated to 180 degrees, bake and cook for 15 minutes and the fear passes.
