The ingredients to make these pralines are very common in today’s kitchen: chocolate, milk and coconut oil, coconut flour to give some texture inside the truffle, vanilla of course and candied oranges to add an aromatic touch and sharp. If you want you can also not put candied oranges, but they are highly recommended.
Ingredients and doses for making vegan chocolate and coconut truffles
For 20 truffles
- 200 ml of coconut milk
- 30 grams of coconut oil
- 200 grams of extra dark chocolate
- 40 grams of coconut flour for the dough
- 1 teaspoon of vanilla powder
- 15 grams of candied oranges
- 30 grams of coconut flour for sprinkling
How to make vegan chocolate and coconut truffles
Blend the candied oranges with a drop of water, until you get a homogeneous paste. If the truffles are for adults only, add 3 cl of rum and stir to mix.
Take a thick-bottomed saucepan, pour in the milk and coconut oil and bring to a light boil, turn off and let it cool for 3 minutes. Meanwhile, break up the extra dark chocolate and throw it in the coconut milk and stir to make it melt.
Also add the flour, the vanilla and the blended candied oranges, stir vigorously and leave to cool for 5 minutes.
Take some truffle dough and knead it with the mandibles, rolling it on a sheet of parchment paper. To keep the chocolate from sticking to your hands, wet them with cold water before kneading the dough. Or you can use two spoons.
Sprinkle a little coconut flour on a plate and roll the chocolate truffles, pressing to make the flour adhere, then put in the refrigerator to rest for 4 hours.
take the truffles out of the refrigerator 15 minutes before serving them.

Let’s choose a sweet and structured wine such as a sweet vermouth, Port wine, Madeira and Marsala, Sherry, but let’s not forget elegant spirits that seem born to pair with chocolate such as Brandy, Cognac and Calvados.
