You know, those mornings when you don’t know what to eat for breakfast and everything seems so flat and dull? Well, get ready, because today we’re going to make a glorious recipe for your breakfast or even serve as a dessert: chocolate chip pancakes.

Do not worry. It is a straightforward and rapid recipe to make. Even if you are among those who suffer from Sleeping Groundhog Syndrome and it takes a while to fuel up in the morning, you will make amazing pancakes if you follow these instructions. All your family members, and even neighbors, will love you. You will be the Lord of the Pancakes.

Well, as the only possible variant, let’s talk about cinnamon and spices in pancakes: honestly, a sprinkle of cinnamon is great for us, gives aroma, expands the flavor volume of the pancakes and makes them less stocky, breaking all that consistency. But it must be a little bit. The protagonists remain the chocolate flakes, so let’s not steal the show!

Ingredients and doses for making pancakes with chocolate chips

To make 14 pancakes

  • 350 grams of flour
  • 40 grams of sugar
  • 2 teaspoons of baking soda
  • a pinch of salt
  • 5 eggs
  • a sprinkle of freshly ground cinnamon
  • 400 ml of milk
  • 260 grams of sour cream or yogurt, whichever you prefer
  • 4 drops of vanilla extract
  • 180 grams of chocolate chips

How to make chocolate chip pancakes

Take two bowls: one for dry ingredients and one for liquid ones.

Sift the flour, add the sugar, baking soda, salt and a pinch of cinnamon and mix well.

Put the eggs in the other bowl and start whipping them with a whisk, then add the milk, vanilla, yogurt and continue mixing for 2-3 minutes.

At this point, slowly begin to pour the liquid mixture into the flour, stirring and being careful not to form lumps. Add the chocolate flakes only at the end. As you well know, the secret to making soft and fluffy pancakes is never to mix the dough too much. It must be liquid and amalgamated, but do not stir for 10 minutes, at most 4-5 minutes.

How to make fluffy, thick pancakes

Take a pan and grease it with a bit of olive oil and when it is hot, pour in a spoon of dough and cook for a few minutes. If you want to make beautiful chubby and thick pancakes, first put a little batter, wait a minute and add a little more, then cook 3 minutes, turn the pancake and cook for another 3 minutes.

As you cook your spectacular pancakes, stack them on a plate, so they stay warm.

When you are done, serve the pancakes and garnish the stack of pancakes with a dollop of whipped cream or the more classic maple syrup and a sprinkling of chocolate chips.
