I love salads, in all their forms, even if I am a convinced and unrepentant carnivore. But I like the infinite possibilities of combinations between fruit and vegetables, fresh citrus-based condiments, yogurt sauces to accompany salads of all kinds with apples, valerian, and cheese, and crispy croutons hiding among the leaves.
But what drives me crazy, (we could say it’s the perfect salad for its incredible taste) is the fennel, orange, and black olive salad.
The recipe for this salad is straightforward but finds a perfect balance between the sweet and refreshing flavor of oranges, the aromaticity of fennel, and the flavor of black olives.
With a nice grind of pepper and a drizzle of good oil, you will have a super-fast, healthy, totally vegan recipe, excellent as a side dish and a light meal to detoxify, thanks to the massive dose of vitamin C and the diuretic properties of fennel.
Ingredients for the fennel, orange, and black olive salad
2 servings
- 400 grams of fennel
- 150 grams of orange
- 60 grams of black olives
- 5 grams of salt and pepper
- 15 grams of extra virgin olive oil
- a few drops of lime juice
- 6 grams of ginger reduced in paste
How to prepare fennel, orange, and black olive salad
Wash all the vegetables. Slice the fennel very thin.
Cut the two ends of the oranges and peel them with a knife to remove the white skins.
Pitted black olives and coarsely cut them.
Put all the ingredients in a salad bowl and season with a vinaigrette of oil, orange and lime juice, salt, pepper, and a small piece of ginger pulverized.
For a good result, dress the fennel salad at least half an hour before serving and let it rest in the refrigerator.
Which oil to pair with the fennel, orange, and olive salad
The wine does not lend itself to this combination. Between orange slices and acidic juices, the wine does not feel at ease, but to make the dish unique, you can dress the salad with the fragrant oil from the Turchi mill in Longiano. If you want to combine it, focus on the flavor of Prosecco, Champagne, and Franciacorta.
