Ingredients and doses for making vegan avocado chocolate mousse

- 5 ripe avocados
- 400 ml of almond milk
- 100 ml of agave or maple syrup
- 30 grams of bitter cocoa
- 8 grams of vanilla powder
- 70 grams of hazelnuts + 40 grams to decorate
- 5 grams of salt
- 220 grams of extra dark chocolate + 40 grams to decorate
- 8 sprigs of mint
How to make avocado vegan chocolate mousse
All you need is a sturdy mixer, solid and powerful.
Start chopping the hazelnuts, the hardest ingredient. Chop until you get a paste, perhaps adding a drop of almond milk to help mix the dough.
When you are done, cut the avocados in half, remove the stones, peel them, chop them and put them in a blender. Add the almond milk, maple syrup, cocoa, vanilla, salt and blend at low speed until you get a thick and perfectly blended cream.
Melt the chocolate in a bain-marie, not boiling the water and stirring constantly.
Pour the melted chocolate into the blender and mix mercilessly until the cream is perfectly blended.
Pour into individual bowls and decorate with some chopped hazelnuts, a sprig of mint and pieces of extra dark chocolate.
As the only recommendation, buy a high-quality extra dark chocolate. The flavor is all there and you don’t need to add much more.
