Vermouth Del Professore Bianco Review And Tasting Notes
Vermouth del Professore Bianco (White), made by Antica Distilleria Quaglia, is an enveloping and exquisite, subtle flavored white wine with the right aromatic touch. But the beauty of this wine is that you can taste the wine, the lovely flavor of the immortal Muscat.
And this is precisely the main pride of this vermouth: first of all, it is a wine. It comes from a credible, well-defined wine with unique characteristics later enhanced and expanded by alcohol, spices, and medicinal herbs.
It is no coincidence that the first vermouths were based on Moscato, a small, great treasure of Piedmont, and so we overturn the cliché of vermouth as a discounted and stylized industrial wine with fake flavors.
Thanks to the Vermouth Renaissance, this great Italian wine has returned to its former glory. It proudly fulfills its role as the true aperitif again, with soda and lemon, or it can return to revive immortal cocktails such as Vesper, Dry Martini, and Tuxedo.
The bouquet
But let’s go back to our Vermouth: the nose is suggestive, broad, dominated by pleasant fruity references and a subtle, mysterious charm that alternates alpine herbs, pepper, ginger, sage, more spicy references, and then the finish turns to pungent with mentholated tones. Overall it is varied and declined with great finesse: the whole aromatic framework moves with a soft step.
The flavor
On the palate, it tickles you with this play of light and shadow between bitter flavors of roots and a decadent, amber sweetness, which nevertheless never lets itself go to boredom and second thoughts.
The sip is taut, vibrant, never gives up, and is never redundant. Indeed among the flavors of cinchona, herbaceous and floral, it manages to enchant with a consistently fresh boost. The finish is long, aromatic and the fruit of Moscato returns to which sweet spices make the court.
It is an excellent vermouth, well balanced, free of smudges, and played on a delicate balance between velvety tones and others that are more rocky and severe.
Cocktails to make
For a fabulous aperitif, serve it with a slice of orange, lemon zest, and soda, but it is also worth trying for a great classic like the Bronx cocktail, where it finds great affinity with orange juice and gin.
Price
20 euros: an honest price for a lovely vermouth.
