Silvio Carta’s Grifu Gin Pilloni is cheeky, very fragrant, elegant, and full of energy. It is not a London Dry Gin that unhinges your gums, nor is it piratical like a Plymouth.
On the contrary, it has a plush step, many subtle suggestions, but a Mediterranean elegance that leaves you with the desire to drink it again.
It is difficult for a gin to have this composure and, simultaneously, gustatory dynamism. There is a lot of pulp in this Grifu. You put many facets in a kaleidoscope, but then the release is slow flavor, well dosed, each scent is in good balance, complementary to the other, and the symphony you get is delicious.
The bouquet
Juniper, cardamom, licorice, wildflowers, rocks, sage, mastic, sea, sun, mint, ginger, a delicate note of Mediterranean scrub with eucalyptus and a thousand resins. The rhythm is engaging. It moves with shamanic elegance and does not stop for a moment. Excellent persistence.
The taste
It is a stormy sea on the palate, layers of salt intertwined with citrus, spicy bursts of pepper in the finish. Thickness bites, it’s not a London Hooligan-style gin, but it has suitable thickness and a velvety sip.
As said at the beginning, it remembers the Plymouth for the earthy flavors, but they are set in a completely different fresco. This is Mediterranean, sunny, crepuscular, and hard.
The structure is there. It is not a thin gin, only that a thousand shades play down the alcoholic impact on the palate, and thus it seems lighter than it is.
Cocktail to do with Grifu Gin Pilloni
For its flavor and elegance, it lends itself to mixing with juices and tonic before, so use it for your Gin Tonic, Paradise, Tom Collins, Heidi, Bramble, Gin Fizz, French 75, Tuxedo, Dry Martini. Good with vermouth and bitters, so Negroni lovers are ok. About G&T, avoid too rough tonics and choose a compliant companion like the Q Tonic.

You can buy it for 37 euros. It is certainly not cheap, but it is a small territorial gin representing the druidic commitment of research and “gathering” of a distillery to enclose a unique piece of land in the bottle. The effort is worth the investment.
