Ingredients and doses for making coconut and chocolate balls without cooking
To make 22 truffles
- 500 grams of cottage cheese
- 450 grams of coconut flour
- 200 grams of sugar
- 100 grams of white chocolate
- 2 untreated organic oranges
- 5 grams of cinnamon
- 8 cl of dark rum, only for adults of course
How to prepare coconut and chocolate pralines without cooking
Wash the oranges with a brush then grate the peel. Put the ricotta in a bowl and mash it with a fork, add the rum and coconut a little at a time.
Add the sugar and orange peel, mix well and let it rest. Meanwhile, melt the white chocolate in a bain-marie, adding a small piece of butter.
Let it cool, then add it to the ricotta and coconut mixture, mix and refrigerate for 2 hours. When you are ready, form many balls with a diameter of 3-4 cm and pass them in the coconut flour, mash lightly, then flour them again. If you want, you can add a little finely chopped organic, untreated orange peel to the coconut flour.
Eliminate the excess flour and the coconut cakes are ready to be served! If you want to try a delicious variant, add 50 grams of chopped almonds to the mixture. Instead of rum you can also use Cointreau or Drambuie for a more intense flavor.
Which rum goes with coconut balls and white chocolate?
We choose a great rum like the Samaroli Nicaragua rum 1999 or a less pretentious rum Don Papa, spiced and full of vanilla. If you want to pair a wine, opt for a structured fortified wine such as sweet vermouth, Port wine, Marsala, Madeira wine, Sherry.
