This week while visiting my local grocery store I came across some spectacular dates that inspired me. They are an excellent fruit to eat as a snack or dessert. I wanted a second ingredient to add to the flavor of my classic pork stew.
After several times around the shelves I came across coconut milk, which inspired me to mix the flavors of the orient with the flavors of the islands and Quebec pork: and here we have the stewed pork with dates and coconut milk, bon appétit.
Ingredients to make the stewed pork with dates and coconut milk
Recipe for 8 people
- 1.5 kg pork (stewed, cut into cubes)
- 420 grams (3 cups) pitted dates
- 2 tablespoons cumin
- 2 onions
- 2 stalks of celery
- 3 bay leaves
- 1.5 liters chicken stock
- 1 eggplant (480 g)
- 340 ml of coconut milk
- 1/8 cup olive oil
- branch cilantro
- salt and pepper
How to make the stewed pork with dates and coconut milk recipe



Before serving add the remaining coconut milk at the bottom of each plate, add the stewed pork, and garnish with a few sprigs of cilantro or chopped jalapeno.
What wine goes well with the stewed pork with dates and coconut milk recipe?
Do not overdo and let’s choose a light and crispy Pinot Noir from Alto Adige or Adelaide Hills. Also sparkling red wines like Lambrusco, Raboso and Gutturnio are ok.
If you want to pair a cocktail, the simple, aromatic elegance of the Mojito will get the job done.
