How it is made
Dalwhinnie distillery adheres to all Speyside stereotypes: a tiny, lovely distillery with white walls and gray roofs that draws water from a magical stream and forest gnomes.
In the midst of windswept green hills, surrounded by nice lakes, and next to a pleasant little river, this location feels a little out of place. With a height of 355 meters, Dalwhinnie is the tallest distillery in all of Scotland.
But don’t be fooled: the distillery was purchased by Diageo, and they’re working hard to develop approachable whiskeys or super sherrieds matured in Fino and Amontillado sherry casks to compete with the neighbouring Dalmores.
Dalwhinnie 15 Years Organoleptic Characteristics
The 15 year old is the entry-level product and represents the cellar’s philosophy. Avalanche of vanilla, honey, and heather. The sherry’s nutty tones are present and help to develop the distillate. The depth isn’t excellent, and it never goes deep, preferring to stay on the surface.
Warm mouthfeel with a flowery and herbal thread for rhythm. Again, almond and these green flavors that combine with a fruit. There is no peat, little medicinal, and it is very floral. The heat is perfectly integrated and does not bite, making it easy to approach.
