Pinot Bianco Moriz Tramin 2021: a savory and fragrant white wine
Pinot Bianco Moriz Tramin 2021 is a delicate and approachable white wine, fragrant and salty, that goes well with fish, Chinese and Indian cuisine, but also excellent Thai dishes.
It’s not structured, but it’s not pale either; it’s not buttery and creamy as a chocolate-filled croissant, and yet it knows how to seduce you with soft scents.
It does not produce malolactic acid, but it is not the classic thin and highly acidic lemon soda-style juice.
No, it is a stylized wine designed to perfection to please and stimulate just enough without setting off sparks or meditation trips, even if the salinity it brings is remarkable for a wine sold for under 15 euros.
How it is produced
The grapes are harvested in several plots at high elevations ranging from 600 to 1200 meters.
Calcareous soils and a wide temperature range guarantee freshness, clear aromas, great finesse, and a slow and constant maturation.
To make the wine more round, it was softly pressed, fermented in steel, and aged in both steel and wooden barrels.
Organoleptic characteristics
golden-yellow color. Arriving were floral aromas of rose and broom, fleshy fruit, a great vegetal thrust but good elegance, and then panettone as if it were raining after the holidays.
Butter, spices, and vanilla are there, but they are the setting and are well dosed.
peremptory tone, but one that is quite fluid; it is not too rigid and has a credible development. closes with aromatic herbs and rock.
On the palate, it darts, hops from rock to rock, has an edge, agility, and a good savory progression.
The soft and honeyed part is there on purpose to dose, soothe, and give comfort, but the ripening of the fruit is clear and never plump or slow.
It is a white that manages to distill the power of the Dolomites, channeling acidity and salt without, however, renouncing a thread of fatness that helps make the wine smoother and less spartan.
Wood aging is calibrated; it aids but does not cover.
Price
14 euros: an acceptable price to pay for a wine that does not disappoint and does not fall into stereotypes, thanks to a hint of minerality that is not at all obvious.
Pairings
Cantonese rice, Pad Thai, Vitello Tonnato, truffle risotto, pasta alla carbonara.
