Nature Picchi Metodo Classico: a rocky sparkling wine from Oltrepò Pavese
Metodo classico Nature Picchi is a Pinot Noir-based sparkling wine that is fresh and easy to drink, pungent, and has a good structure; it is an excellent aperitif and goes well with fish dishes or slightly spiced Thai dishes.
After 36 months on the lees, it has good grit and a stimulating layering without going too deep. It was born as a clean and essential classic method sparkling wine, and we thank him for this frankness without frills.
It’s acidic, it tastes like wood, it’s savory, it moves dynamically, it’s already perfect and balanced, and that’s all. Of course, if you want more development and personality, you can leave it in the cellar for up to ten years. There is plenty of acidity; therefore, you can also age it without any problems.
How it is produced
We are in the Oltrepò Pavese, the Italian homeland of Pinot Noir, which is neglected by most but has a real gold mine of small wineries that work well and sell at very attractive prices, as in this case. Vineyards in Casteggio. Early harvest at the end of August to keep the acidity high. Only steel was used in the vinification, and the wine was aged on the lees for 36 months.
Organoleptic characteristics
Straw color with a beautiful icteric luminescence. Fluid and lascivious perlage with small bubbles.
Direct and cheeky bouquet, hard and cut in waves of chalk.
You don’t put on make-up or dress up; it’s all a whirlwind of fleshy forest flavors, seaweed and tea, sea and watermelon.
Finish with tomato bruschetta.
Orgasmic, but with moderation.

On the palate, it is acidic; however, it finds sapid momentum and dynamism. The yeasts have given shape and structure to an icy fruit, allowing for a simple but never banal articulation.
Overall, it is a pleasant, fragrant wine with a well-managed dark trait. The structure is good but not colossal; it lives more on expansiveness than depth.
