Hyakushun Junmai Ginjo Muroka Genshu review and tasting notes
Hyakushun is a renowned brewer in the Fukushima region, known for creating high-quality sake that embodies Japanese tradition. This Junmaï Ginjo Muroka Genshu is a true (masterpiece) expression of purity and respect for the ingredients.
This sake is a Junmaï Ginjo, produced with 60% polished rice, unpasteurized (nama), unfiltered (muroka) and undiluted (genshu). This makes it a particularly fresh, zappy, natural and complex style of sake.
Tasting Notes
Hyakushun Junmaï Ginjo Muroka Genshu offers an intense bouquet of tropical fruits such as mango and melon, with floral notes and a hint of spice. On the palate it is full-bodied, vibrant and powerful thanks to its genshu character, with a higher alcohol content (17-20%).
Pairings
Sushi, paella, chicken tikka masala, Chicken Cacciatore, Vitello Tonnato, truffle risotto, pasta alla carbonara.
Terroir
Made in Fukushima, one of Japan’s main sake-producing regions, Hyakushun uses pure spring water and high-quality local rice. Fermentation takes place at a low temperature to preserve the rice’s fresh aromas. As it is neither pasteurized nor filtered, the sake retains a rich, complex structure, maintaining the natural liveliness of nama genshu.
Price
Hyakushun Junmaï Ginjo Muroka Genshu is a premium bottle that can be found at an average price of 50 euros, a great choice for those who want to explore an unconventional sake style, full of character and authenticity
