The Chardonnay contributes elegance and creaminess; the Pinot Noir offers a dark and anxious, almost decadent note and, of course, substance and depth. The finish is laid back, energetic, with a wonderful mineral persistence and a trace of citrus.

Though it also goes great with more structured meals like Parmesan cheese, paella, chicken tikka masala, Chicken Cacciatore, Vitello Tonnato, truffle risotto, pasta alla carbonara. Its liveliness makes it a great aperitif as well, perfect for beginning a classy dinner.
Winemaking and Terroir
Mostly made using grapes from the renowned Grand Cru vineyards of Aÿ, this Champagne gains from the chilly environment and mineral-rich limestone soils of the area. The lees’ maturing over at least 36 months gives the wine a creamy and sophisticated framework.
