Dolin Vermouth Blanc is one of the few protected by the AOC, an artisanal product made with care. It’s precise and fragrant, but above all, smooth.
Forget the usual muscular, hyper-fruity vermouths, full of dazzling and engulfing scents of a thousand spices, lunar herbs, and dragon’s blood.
This Dolin Vermouth Blanc is simple, clean, and expertly designed. The botanicals that macerate in alcohol are Chambéry herbs, spices, medicinal herbs, and secret ingredients: 56 in all.
What is surprising is the fineness of the wine: it is not a masterpiece or a world-class wine, but it is nice to know that clean and easy-to-mix vermouths still exist.
If it is true that vermouth has now gone beyond the Renaissance, and we have thousands of bottles to amuse ourselves with, all too often, we fall into the most forced stylization in the idea of vermouth that some producers believe may be interesting.
For heaven’s sake, many manage to make good flavored wines, but now it seems that every vermouth must be a kaleidoscope of flavors, aromas, and pyrotechnic suggestions.
Not this one. It’s a good cross-country skier, keeps pace, and has a reasonable price. For Martini, where vermouth does not have to fight with gin to be the protagonist, it is excellent.
The bouquet is subtle, spicy with nutmeg and spices, a good dose of herbaceous aromas, a floral breath that refreshes, and then returns the fruit, whispered, white peach. Overall it is very inviting and icy and stings your nose with jabs.
It is sharp, of discreet thickness on the palate, with a tasty sip, rightly bitter, where layers of herbs alternate.
The alpine call can be heard. It is a deep and rocky echo, maybe not everyone will like it, but the component of alpine herbs is strong enough. It does not prevail. It is a clean and flowing dry vermouth with character, but it is never overbearing—quite a long finish with spicy returns.
16-18 euros: an acceptable price for a vermouth great for making cocktails or basic aperitifs.
