As a filling, at least this time, there is no vegan mozzarella but a simple, exquisite black olive paté. You can fry the tofu and then compose a double canapé with the tapenade inside to simulate the effect “in Carrozza.” Or, if you want a lighter dish, you can bake it until it is golden.

  • 200 grams of black olives
  • 3 tablespoons of lemon juice
  • 40 grand of parsley
  • 15 grams of thyme
  • 50 grams of vegetable oil

Cut the tofu into small squares or rectangles measuring 6 by 3 centimeters, season with salt and pepper, and fry the tofu in sunflower oil. If you want a more delicate and light dish, place the tofu rectangles on a baking sheet covered with parchment paper and cook for 10 minutes at 180 degrees.

Let’s move on to the preparation of the black olive paté. Pit the olives, wash the capers, put all the ingredients in a blender, and chop until you have a creamy, spreadable tapenade free of coarse chunks. There is no standard dose as a quantity of extra virgin olive oil to add. Start without it, and then as the paté is formed, see if it is appropriate to add extra oil to make the preparation more frothy.

When the tofu is cooked, place it on a plate covered with absorbent paper and pat it dry to absorb excess oil. Take two rectangles of tofu, put a hint of olive paté on the tofu and then seal with the other piece of tofu. In this way, you can create delicious fried canapés, excellent as an appetizer or a delightful second course.
