The Spelled and bean soup is a homemade dish that brings peace back to the family with warmth and goodness. It is a simple dish, the soup par excellence, the rustic one that includes beans and all the vegetables of autumn. There are no perfect recipes. You can use the vegetables you prefer. Be careful to add black cabbage, which gives a bitter touch that not everyone likes.

But there is a secret to the perfect spelled and bean soup: use dried legumes and not canned ones.

As with all good recipes, it takes time. You will have to leave the night before, soaking the beans for at least 12 hours.

Ingredients for spelled and bean soup

  • 4 carrots
  • 2 onions
  • 2 sticks of celery
  • 2 cloves of garlic
  • 1 leek
  • 1 kg of dry beans
  • 2 bay leaves
  • 500 grams of hulled spelled
  • 100 ml of tomato sauce
  • 10 grams of salt and pepper
  • 1 sprig of rosemary
  • 35 grams of extra virgin olive oil
  • 1 optional fennel or 50 grams of kale or broccoli

How to prepare bean and spelled soup

Let’s start with dried beans: put them to soak the night before or in the morning.

After 12 hours, drain and cook them in a large pot with plenty of water and the two bay leaves for 1 hour.

Turn off the stove, and drain the beans, but do not throw away the cooking water. You can discard the bay leaves.

Let’s move on to the sauté: wash the vegetables and cut them into brunoise onions, garlic, leek, celery, and carrots, and simmer in a large pot with a thick bottom, with the coarsely chopped bacon, for 15 minutes in 6 tablespoons of olive oil, without take color.

Do not make small pieces too small otherwise, they will pulp during cooking, and it is nice to see the various colors of the ingredients in the final dish, especially carrots.

After 15 minutes, throw the beans into the pot and add 2 liters of cooking liquid from the beans and half a liter of broth. Remember, you need a lot of liquid for cooking spelled.

Put the spelled in a colander and wash it under running water, stirring with one hand to remove any impurities.

Pour the spelled into the soup, season with salt and pepper, and bring to the end of cooking, adding broth if it gets too dry. It usually cooks in 40 minutes, it depends on the type of spelt you have purchased, but if it is a good product, it will take a long time …

After 20 minutes, throw the rosemary sprig into the pot.

After 40 minutes, taste the spelled, and if it is cooked, turn off the stove and let the soup rest for 5 minutes.

Serve, season with a drizzle of extra virgin olive oil, and serve the farro soup.

Which wine to pair with bean and spelled soup?

The dish is substantial, rich in proteins, intense flavors, and texture, so the paired wine must also have thickness. There are two ways. If you prefer a white, uncork, a powerful Greco di Tufo or an excellent Sicilian Carricante. If you prefer red wine, rely on the balsamic charm of Cerasuolo di Vittoria.
