Today’s recipe is a classic of the super-fast home cooking: a delicious cold pasta salad with tomatoes, olives, mozzarella and chives.
Lately, I’m specializing in light-speed dishes for 20 minutes lunch breaks and with this one, I can aspire to the world record.
It’s a classic pasta salad, also excellent prepared in advance to save time, but also as a brunch dish for a picnic or a Mojito summer party.

Ingredients for making a great pasta salad with tomatoes, olives, mozzarella and chives

- 500 grams of pasta like rigatoni
- 4 tomatoes
- 2 mozzarella
- a bunch of chives
- 20 black olives
- salt and pepper
- 1 clove of garlic
- extra virgin olive oil
- a few leaves of fresh oregano
- as optional a handful of Parmigiano Reggiano or vegan cheese if you want a vegan recipe
How to make the perfect cold pasta salad with tomatoes, olives, mozzarella and chives
Place a pot of water on the stove and bring it to a boil.
Wash tomatoes and cut them into wedges. If you want to peel them, put them into boiling water after making an X incision, let cook for 20 seconds, remove, put in a strainer with ice, peel and cut.
Crush garlic and let it gently fry in a pan with 5 tablespoons of oil: 5 minutes.
Cut mozzarella into cubes and slice olives.
When water boils, cook pasta, drain and pass it under cold water. Season with tomatoes, mozzarella, olives, garlic perfumed oil, fresh oregano, a sprinkle of salt and pepper and chopped chives.
That’s all, easy and delicious.
