Ingredients
- 800 grams of overproof rum (like Wray & Nephew Overproof Rum)
- 304 grams of whole allspice berries (scaled from 113 grams to maintain proportion)
- 2-3 cinnamon sticks
- Peel of 1 orange (avoid the pith)
- 955 milliliters of water
- 432 grams of brown sugar
Instructions
- Infusion
Toast the allspice berries lightly in a skillet. Crush them a bit and combine them with the overproof rum, cinnamon stick, and orange peel in a jar. Seal and let it sit for 10 days, shaking it gently every other day. - Sweeten the Deal
Strain out and discard the solids. Heat water and brown sugar in a saucepan until sugar dissolves. - Mix and Mellow
Mix the infused rum with the simple syrup. Seal it and let it sit for at least 2 days. - Final Strain
Strain through a fine-mesh sieve or cheesecloth to remove any remaining particles. - Bottle It
Transfer to a clean bottle. Let it sit for another week before using.
