Easy Bean Burgers: The Perfect Vegan Recipe

Low in calories without sacrificing taste, these vegan hamburgers are delicious. And they can also be used as a main course for a whole meal or a tasty and light lunch break.

Our recipe for bean burgers, a vegetarian classic, is straightforward to make at home. The first piece of advice I have is to use azuki beans rather than any other kind of bean while preparing burgers.

And then let’s answer Hamlet’s question: how to make hamburgers without eggs—what can you use as a substitute?

Very simple: flax seeds. They are excellent thickeners to keep all the ingredients together; you will no longer need eggs to make hamburgers.

Ingredients

  • 150 grams of beans, either azuki, borlotti, or cannellini
  • 6 lettuce leaves
  • 2 teaspoons of ground flaxseeds
  • 2 tbsp. of minced parsley
  • 1 little onion
  • 60 grams of carrot
  • 1 tsp. of dried thyme
  • half a teaspoon of dried coriander
  • breadcrumbs
  • organic, extra-virgin olive oil
  • spices and seasonings

Preparation

You should start by rinsing the beans and then soaking them in cold water for at least 12 hours before you bother to rinse and drain them.

Soak the beans in cold water for at least 12 hours, then cover them with two liters of water and bring them to a boil.

Add the salt in the last 10 minutes of cooking time. Put them in a basin after they’ve been drained.

You may use an immersion blender to coarsely chop the beans. Mix the ground flax with 3 tablespoons of water in a small dish; let sit for 5 minutes to thicken. An egg can stand in for the butter in this recipe.

Prepare the lettuce by washing, drying, and slicing it into thin, long ribbons. Chop the onion and carrot very finely.

In a mixing bowl, toss together the beans, thickened flax, greens, parsley, and spices.

Use a fork to fully combine the ingredients, and then shape them into patties. If the dough is too soft, add breadcrumbs to firm it up.

Burgers may be cooked with a tablespoon of oil in a nonstick skillet over medium heat.

Cut the bread in half, toast it in a pan, brush the bread with your favorite sauce, cut some onion slices, add a couple of tomato slices, some lettuce, some arugula, a bit of vegan cheese if you like and your vegan burger is ready to go!

Toss with your preferred sauces and serve.
