Ok, but to change the cards on the table, we will make a particular recipe: baked prawns with sweet and sour sauce, a dish of Chinese origin that enhances the delicacy and natural sweetness of prawns with a sauce made with honey, garlic, ginger, vinegar, and anise.
It is not a complicated dish to make, not at all, so do not panic. We will cook the prawns in the oven and then cover them with the sauce before the end of cooking. As a peculiarity, we will skewer the prawns in skewers. In this way, you can serve them both in serving dishes and as finger food for a homemade aperitif. In this case, it is natural to think of two great sour cocktails, Daiquiri and Margarita, which find incredible harmony with prawns.
Ingredients and doses for making baked prawns with sweet and sour sauce

- 24 king prawns
- 24 iron skewers
- 2 cloves of garlic
- 60 grams of honey
- 3 tablespoons of apple cider vinegar
- 10 grams of ginger
- 1 star anise to grind
- 7 grams of salt
- 5 grams of pepper
- 5 grams of a teaspoon of sweet paprika
- 30 grams of toasted sesame for a final sprinkling
How to make baked king prawns with sweet and sour sauce
Wash the prawns well, remove the shell, pierce the meat in the back with a fork, and remove the intestines.
Put them in a bowl, season with extra virgin olive oil, pepper, and a little lemon, stir, seal and refrigerate for 1 hour.
Meanwhile, let’s prepare the sweet and sour sauce: peel and crush the garlic until it is reduced to a paste. Do the same thing with the ginger.
Grind the anise with a mixer or a coffee grinder.
Put the honey in a saucepan, season with a pinch of salt, a little pepper, garlic and ginger, anise powder, paprika, and vinegar. Cook for 5 minutes on a low flame, then turn off.
Take out the prawns and prepare an oven-sized size, covering it with parchment paper. Stick the skewer in the prawns starting from the tail to reach the head.
Put the prawns on the baking sheet, bake, and cook for 6 minutes at 170 degrees. Open the oven and brush the prawns with the sweet and sour sauce with a brush. Close the oven and cook for another 6 minutes.
Remove from the oven, sprinkle with toasted sesame and dispense skewers of prawns and happiness.

We choose a sparkling wine, such as Champagne or Cava, to cut the delicate taste of the prawns and the sauce’s sweetness with freshness and flavor. Even savory white wines like Cirò Bianco DOC or a Manzanilla sherry go well.
