Be careful to choose ripe avocados. Otherwise, the flavor is appalling.

Ingredients for the avocado sandwich

  • 4 slices of Tuscan bread or tins, rye or spelled, would be the top
  • 2 eggs
  • 2 avocados
  • 1 lime
  • 8 grams of salt
  • 6 grams of pepper
  • 40 grams of thyme
  • 30 grams of oregano
  • 20 grams of rosemary
  • 6 grams of ginger
  • 2 small cloves of garlic

How to prepare the perfect avocado sandwich

Squeeze the lime.

Peel the avocados and mash them with a fork in a bowl, seasoning them with lime juice.

Chop the garlic and ginger and place them in the bowl with the avocado.

Season with salt, cumin, and pepper and stir; even a few chopped onion rings would look good.

Chop the aromatic herbs with a knife.

Bring the water to a boil in a pot that is not too high, 20 cm in diameter—season with a tablespoon of vinegar and a pinch of salt. Lower the heat.

Toast the bread, rub with garlic, and spread the crushed avocado on top.

With a spoon, mix the water to form a vortex. Then break the shell and gracefully let the egg fall into the vortex. Do not stop stirring, but be careful not to touch the egg, which will cook externally due to the hot water.

Let it cook for 3 minutes, then collect it and place it on top of the avocado, season with the chopped aromatic herbs and pepper and cover with the other slice of bread.
