Kilchoman Cognac Cask Matured: A First-Ever Venture
The Kilchoman Cognac Cask Matured, a first-ever venture of this type for the distillery, along with the Fino Cask Matured, are set to hit the shelves in July, offering a deep dive into the influence of these distinct cask types on the distillery’s spirit signature.
Flavour Achieved through Cognac Cask Maturation
To achieve the desired flavour for the Cognac Cask Matured variant, the distillery relied on 32 casks procured from the French manufacturer, Tonellerie Bosseut. These casks were then filled with Kilchoman spirit and set aside to mature for a period of six years.
In the words of Kilchoman’s co-founder, Anthony Wills, “Our limited-edition cask explorations provide a platform for creativity and experimentation at Kilchoman. The Cognac casks we have chosen for this 2023 release harmoniously marry our fruit-forward, citrus-infused spirit style with the robust oak of the Cognac. It’s all about finding a subtle balance when utilizing Cognac casks. By aging this release for a minimum of six years, we have ensured a clear presence of both the spirit and cask flavours, with neither taking precedence.”
Fino Matured: Building on the Popularity of 2020 Release
The 2023 Fino Matured variant builds on the popularity of Kilchoman’s 2020 Fino Matured release, which marked the distillery’s inaugural worldwide launch of this sherry cask style. The spirit for the 2023 limited edition was distilled back in 2018 and aged in 20 sherry butts acquired from the Spanish bodega, Jose y Miguel Martín.
Wills shared his thoughts on the Fino Sherry maturation process saying, “This method aligns seamlessly with our distinctive Kilchoman character. The 2023 release accentuates the scents of fragrant green apple, simmered fruits, and sweet citrus, while ensuring the quintessential Kilchoman peat smoke subtly lingers on the palate. The Fino is yet another testament to how sherry casks can amplify our Kilchoman whiskies, instead of masking it.”
Bottling Details and Availability
Both the Kilchoman Cognac Cask Matured and Fino Matured, boasting 50% ABV each, are bottled without chill filtration or added colour. They are up for grabs via Master of Malt, priced at £79.95, from a retail recommended price of £86.95.
