The Producer
A rising star in the Greek wine scene, Ariousios has quickly garnered acclaim for its masterful expression of Assyrtiko. Melding time-honored techniques with contemporary flair, Ariousios is redefining Greek winemaking, focusing on quality and a deep respect for the unique terroir.
How it is made
Warmth and richness are what make Ariousios’ Assyrtico so remarkable. This wine is the outcome of five days of skin-scratching after fermentation in stainless steel, using grapes that were naturally grown on clay-loamy soil in a 2-hectare vineyard. Later, it ages in the same containers for an additional 11 months while staying in touch with the fine lees. Only about 2000 bottles can be produced.
