Cardinali winery and wine bed and breakfast

The vineyard, personally breaded by our family, is located in the hills above Castell’Arquato: one of the most traditionally wine-rich areas in the North of Italy, in the Emilia Romagna region. It all started the early ‘70’s as a hobby: it was our Dad’s own “garden”! Since 1996 then it became our way of life and our economical sustainment. Since the beginning of our story though, our philosophy of production has always been centred on the “spontaneous” breeding of the vines showing all their peculiarities in the wines themselves.
Cardinali winery philosophy
We are constantly evolving and pleasantly improving towards the aim of a healthy prove of our extraordinary land every vintage different! Our criteria is that the grapes have to be rich and in good health in order to leave to the cellar just with the purpose of checking over the fermentations go on well with the seasons. In those years of experience the cellar had to give way, year after year, to the vineyard who we believe it’s the undoubted the leading instrument of a well orchestrated wine!
The property extends only over 10 hectares in one land and only 5 of which are planted with vines. Only manual work is used, ours, no heavy machines at all, no grass cutting, no kind of cutting after the spring pruning, a lot of supervising and if the year isn’t as favorable as usually, we intervene only with copper and sulfite where needed. We do not buy grapes and we mainly breed local varieties.
The harvest is also manual and the grapes reach the cellar in small baskets only in 10-15 minutes after being picked up. They are left for some hours in the cellar at a good temperature to recover from cutting. In the cellar they begin their fermentation at controlled temperatures to maintain flavour, freshness, cleanness. We leave indigenous yeast to do their job and we never add sulfites all way through the whole process.
Spumante Metodo Classico Millesimato Pas Dosé
A delicious sparkling wine made of Malvasia. Delicate yet lively straw color. Charming aromas of citrus, butter, hazelnut and flint on the nose. Creamy, salty palate with lively freshness. Food matches: ricotta gnocchi, pancetta piacentina, fried prawns, tortelli filled with nettle and seasoned with butter and sage.
Gutturnio Classico Superiore
Rich and bright scarlet color. Spicy nose with aromas of juicy morello cherries, wild strawberries, green tea and pepper. Clean and smooth, well balanced and with sharp acidity coursing through the firm texture. Strong but fine tannins. Food matches: beef yakitori skewers, barbecued beef and black bean sauce, lamb cooked in milk.
Torquato
Clear and bright ruby color. Prominent fruity and flowery aromas of violet, blueberries, moka, cola and licorice, with a intriguing herby undertone. Full palate, smooth and refined with supple tannins well balanced by roundness. Food matches: barbecued lamb on lentils, wild boar ragù over black truffle pappardelle.
Dolce Montepascolo
This white offers a sumptuous yet fresh mix of dried peaches, almonds, broom and saffron. Smooth and luscious on the palate, with zippy freshness leading to a long finish full of balsamic suggestions. Food matches: white peach & amaretto cheesecake, Cheddar and Stilton.
Tomà Gutturnio IGP
Dense ruby red. Lovely nose with cassis, juniper followed by dark chocolate. Straightforward on the palate, with soft tannins and amazing drinkability. Food matches: black truffle risotto, passatelli with Parmigiano fondue and truffle, bucatini all’amatriciana, roast beef, hamburger.
