Pagadebit wine has been for centuries the fundamental white wine of Romagna and Puglia, the one with which debts were paid, as the name implies, thanks to an incredible generosity of yields.
There is no Pagadebit vine, because in reality it is the white Bombino, a vine widespread throughout Italy and which for a long time was confused and / or vinified with Trebbiano, but which has found a great diffusion throughout the Adriatic coast, from Romagna, down to Puglia, where it is still widely used.
Organoleptic characteristics of Pagadebit wine
Our beloved Bombino Bianco is a clean, elegant wine, not too intense and not very fat or full. It is the classic fragrant and precise white wine, it has marked aromas of yellow flowers and lots of fruit, aromatic herbs, a drop of honey and iodized aromas that come from the sea. As mentioned, it is a wine that loves the sea, the coast and the sea itself is essential to make it more pulpy and salty, it adds a layer of salt and excellent brackish flavors.
On the palate the Bombino Bianco-Pagadebit is a wine that focuses on pleasantness and freshness, it is not a ninja turtle or a titanic wine, but not even a simpleton. What it has it gives it all without hiding and lends itself to excellent combinations with fish and shellfish. What is necessary is to keep the yields of the vines contained, let’s not say low, since it produces a lot and the sugars in the grapes are not a bomb and therefore lose intensity. In short, it should not be watered down. The skin of the Bombino Bianca bunches is thick and rich in bloom and with maturation it becomes tinged with characteristic specks. It wouldn’t be bad to try a Bombino Bianco with a minimum of maceration on the skins, just so as not to uncork the usual bottles, but honestly we haven’t found it yet. History of Bombino Bianco-Pagadebit
It is a vine of which not much is known and no one has yet bothered to make great ampelographic analyzes. Legends tell that it arrived on the Adriatic coast of Italy with the return of some crusaders, others who come from Spain. In short, the usual theory of east or west, roll the dice and you choose, but for now we are satisfied.
