The Très Vieux Rhum Agricole, J.M. is a distillate with which it is a pleasure to spend moments of intimacy. It is spicy, variegated, sweet, caressing, and very elegant, but never too overwhelming.
However, it is a warm and enveloping rum modeled by aging in casks used to produce American bourbon. And it is precisely this refinement that makes this delicious distillate languid and spicy.
Perhaps it is not a structured or aromatically pure or direct rum. It is slightly syrupy. We can say that with all this richness of spices, scents, and tropical echoes, it was born to wink and seduce the palate.
But the structure is there. Indeed, it is a sizzling and credible rum at an alcoholic level with 48 degrees of pure Caribbean passion.
We liked it, but we opened it on a wild rum night and enjoyed it on the beach waiting for dawn, and we elected it as a banquet rum par excellence. Of course, if you like more angular and uncompromising agricultural rums, this is a bit too smooth, let’s say.
It is undeniable that the Maderised tones and flavors are there on purpose to bewitch. But what’s wrong with it, after all, wood is one of the essential ingredients in the production of rum, whiskey, or brandy.
The bouquet
Ripe and ethereal nose with candied fruit, nuts, cinnamon, and spices at will. Puffs of tobacco and cinnamon, a tasty finish where it becomes intense with flowers, herbs, mint, caramel, cherries in alcohol, and endless vanilla. The typical bouquet you would expect in any rum suitable for old pirates with wooden leg and saber.
The taste
Warm mouth, ample, and sumptuous, but the alcohol is well modeled, kept on a leash by spices and sweetness that smooth out the sensation, but not the alcoholic contribution. The persistence is excellent. It lasts minutes. On the palate, you will feel a whole symphony of spicy, floral, savory, and oxidized flavors that dictate a soft rhythm but are difficult to resist, thanks to the excellent balance between fruit and wood.

An excellent rum with a balance achieved with skillful aging, a product to share with friends, sold for 54-58 euros: an honest price.
