The Fine Champagne Cognac Prelude Napoleon Vignoble Simonnot is a distillate of great intensity, sumptuous, rich in spicy, vanilla and complex aromas, majestic as a structure. Still, it succeeds in the difficult attempt to offer a very defined product, recognizable and not excessively masked by the wood.
This fine cognac comes from a small and scrupulous producer, attentive to every stage of processing, starting from the vineyard, where the utmost care is in force. The rest is done by different types of soils and unique crus that characterize the grapes, making them “stimulating” even in the blending phase of the base wines.
After a careful (double) distillation where heads and tails are eliminated, but at the same time we try to make the distillate as aromatic as possible, we move on to long aging in new wooden barrels with a capacity of 350-400 liters to allow less traumatic and more gradual aging.
The bouquet
And in fact, the nose of this cognac has significant aromatic volume, elegance, warm and enveloping fruit with splendid notes of dried fruit, vanilla, cherries in alcohol and cooked plums. Traces of tobacco, chocolate and honey frame an incisive and very long finish. Good variety.
The taste
On the palate, it is warm and sumptuous, opens with classic flavors of fruit and honey, then turns to nutty, always poised between spicy notes, pepper and the heat that never gives up. It is a distillate defined by power and rigor. However, it is not for delicate palates accustomed to cheeky cognacs: the alcoholic intensity still leaves room for aromatic development, which is never taken for granted. Endless finish with walnuts and vanilla.
Overall it is a demanding cognac to be sipped with great calm, without haste, to allow it time to open up and be appreciated several times. It is not a soft and immediate drink, but it can give great satisfaction.
