The 2020 Arbois Pupillin Ploussard made by Domaine de la Renardiere is one of the tastiest and juiciest wines you can find throughout the French panorama, a real fermented grape juice created to amaze the palate. Acidity, round fruit, aromatic depth, and incredible smoothness: if you are looking for these qualities in a bottle of red wine, you have found the champion of the category.
But don’t think so much about a predictable wine as about a tiny fresco from the Jura. All this drinkability, this pleasantness is inlaid with salt, elevating the wine, making it multifaceted and more full-bodied.
How is it produced?
The 28-year-old vines have their roots in what was the sea millennia ago, and in fact, digging it is not uncommon to find fossils of fish, mollusks, and starfish. The soils are based on red marl, limestone, and clays. The management of the vineyards is organic: synthetic products, herbicides, and fertilizers are banned.
Only copper and sulfur and biodynamic preparations are used. The processing is clean, and there are no manipulations in the cellar.
After the harvest, the grapes are left to macerate in steel and ferment with indigenous yeasts. The aging takes place in wooden barrels for 1 year.
Organoleptic characteristics
The wine you get is a textbook Ploussard. Pale color, fruity and ethereal aromas run after each other in a greenhouse full of flowers. It is not complex or profound, but it does its duty without flaws.
On the palate, it is juicy, vertical in the development of acidity, and with excellent drinkability. The tannins give consistency and propulsion to the sip, but they are certainly not powerful.

Food Pairings
Despite being a red wine, don’t overdo it with meat and powerful combinations, at most pork. It’s perfect with white meats, Indian cuisine, or Chinese takeaway.
